Homemade Pumpkin Noodles 南瓜板面

板面几乎每个星期都会出现在我们家, 依哥哥最爱面食。所以要是他心情不好,只要煮个板面或意大利面他就马上忘得一干二净, 平时吃饭只吃半碗的他吃面可以吃上和依八八一样的分量有时吃完还要添加!
Homemade Pumpkin Noodles 南瓜板面
南瓜面条材料
Pumkin Noodles Ingredient:

南瓜 160克(蒸熟压成泥)
160g pumpkin (Steam and mash)
普通面粉250克
250g plain flour
盐 1小匙
½ tsp salt
鸡蛋 1粒
1 egg
油 1汤匙
1 tsp corn oil
干薯粉 适量(洒面用)
Tapioca flour for dusting


做法 Method
1. 将面粉, 南瓜泥,盐,鸡蛋和油放入个大盆里,搓成光滑面团。
1.  Sift flour into a large mixing bowl and add salt. Add egg, pumpkin paste and oil. Blend well and knead into a stiff dough.
2. 然后用布盖着休面1/2小时.
2. Cover dough with a tea towel and leave aside for 1/2 hours.
3. 桌面撒上干薯粉 ,拿出部分面团沾上干薯粉揉小面团放入杆面机杆成长形。
3. Dust table top with tapioca flour,take out some dough lightly sprinkle or dust with tapioca flour and roll to a small ball. Insert a piece of dough and keep passing the dough through the machine.
4. 将长形的面放入杆面机杆成喜欢的阔度。
4. For the final stage, pass the sheet of dough through the cutting machine to make the noodle strands.

江鱼仔高汤 Anchovy Soup:
江鱼仔Anchovy 100g
清水Water 1 L
食油Cooking Oil 1tbsp

1. 江鱼仔洗净,沥干水分,放入热了油的锅内,煎香,清水倒入,大火滚后改小火煮1小时。
1. Wash anchovy,let it completely drypour the cooking oil into a pot,pan fry the anchovy,pour the water into the pot,cook with high heat,after boil,turn to low heat and cook for 1 hour.
配料 Dressing:
爆香江鱼仔 Fried Anchovy
树仔菜 Vegetables
鱼丸 Fish ball
香菇肉碎
把南瓜面条放入
滚着的清水内,煮大概1分钟,捞起,冲冷水,再把面条倒入另一个滚着的高汤锅内,稍微煮一下,倒入碗内,表面放配料即可趁热享用。
Put the pumpkin noodle into a boiling water to cook for 1 minute,take out & rinse with cold water,put the noodle into another boiling soup pot,cook & pour into a bowl,dress the top with dressing or other food you like.
