makes about 23 - 25pcs 8cm Stained Glass Cookies (depend on the size of cutter)
材料 Ingredient:
无盐奶油100,置室溶化
100g unsalted butter,
细砂糖55克
55g caster sugar
柠檬汁1茶匙
1tsp lemon juices
低筋粉162克
162g cake flour
玉米粉12克
12g corn flour
苏打粉1/4茶匙
1/4tsp baking soda
水果彩色糖果 (FOX 或 BON BON 牌子),剁碎
Fruity candy (FOX or BON BON brands)cut into pieces
做法 Method:
1。 将低筋粉,玉米粉和苏打粉筛过置旁待用。
1. Sift cake flour, corn flour and baking soda, set aside.
2。 将奶油和细砂糖搅打至松软。
2. Beat butter and sugar till light and fluffy.
3。 加入柠檬汁和所有粉类,搅拌均匀。
3. Add in lemon juices and flour mixture, mix well.
4。 用擀面棍将面团擀成约4mm的薄面团,将之藏于冰箱30分钟。(硬化后的面团较好操作)
4. Use a rolling pin, roll the dough to a thin sheet (~4mm), keep in the fridge (30mins) to harden for easy handling.
5。 用曲奇模子模出喜爱的形状,然后移至铺上油纸的烤盘。
5. Use cookie cutters to cut dough into desired shapes. Transfer cookies to prepared baking sheets.
6。 此时用较小的曲奇模子或利刀在曲奇的中间割出一个空间。(此空间是保留待会要填上水果彩色糖果的)
6. Using a smaller cookie cutter or a knife, cut shapes into centers of cookies, reserving these center bits to add into extra dough.
7。 如果曲奇打算现挂在圣诞树,那就得在曲奇的上端钻一个小洞,然后才送进烤箱烘焙。
7. If cookies will be hung as ornaments or decorations, poke a small hole in the top of each cookie before baking.
8。将曲奇放入已预热150‘C的烤箱。烤10分钟,然后取出烤盘。
8. Bake at pre-heated oven at 150C for 10mins. Remove the tray from the oven.
9。将剁碎水果糖小心排放在半熟的曲奇中间。(过多的水果糖量,会导致曲奇受染色)
9. Cut candy to ½ or 1/3, place it into the hollowed-out center of the half baked cookies, try to keep the candy within the center。 Any candy specks that fall on the cookie will colour the cookie.
10。继续烘烤约7- 8分钟,水果糖将会溶化和滚泡。
10. Continue to bake for another 7-8mins, the candy should be melted and bubbling.
11。 取出烤盘,置架子上,待曲奇完全冷切,才可以收进真空瓶子。
11. Remove baking tray from oven and place on wire racks to cool. When cookies are completely cooled, remove and store in an airtight container. String with ribbon if you want to hang as an ornament.
