材料Ingredients:
1 杯炸油
1 cups oil for deep frying
2 大匙蒜茸
2 tbsp chopped garlic
5 粒葱头碎
5 shallots, peeled and shredded
2 支香茅, 切丝
2 stalks lemongrass, shredded
2 大匙豆鼓
2 tbsp Fermented Black Beans
500g 大虾, 剪须和脚
500g big prawns, trimmed, cut a slit at the back and deveined
调味料Seasoning:
1 小匙糖
1 tsp sugar
1/4 小匙盐
1/4 tsp salt
1/4 小匙胡椒粉
1/4 tsp pepper
做法 Method:
1. 炒热油, 放入蒜茸, 葱头碎, 香茅, 豆鼓炒匀, 爆至微黄, 捞起滤干油。
1. Heat up oil for deep frying, add in garlic, shallots, lemongrass, fermented black beans and saute until lightly brown。 Drain。
2. 将爆材料的有煮滚, 放入虾大火炸一分钟至熟, 捞起滤干油。
2. Bring the oil to boil again。 Deep fry the prawns over high heat for 1 minute or until cooked。 Dish and drain。
3. 空锅放入全部炸好的材料和调味料, 用中火炒匀, 即可盛起享用。
3. Put all the ingredients and seasoning in a clean wok, stir fry over medium heat until well mixed。 Dish up and serve。
